Ascii-art is available in a grand total of two colours: black white ANSI art uses a bunch of ANSI codes to add colour to the image, although in the process makes it illegible for any mail program/text editor that can't decipher ANSI codes... OTOH you could opt for the HTML 'cheat' (ie. wrapping lots of or the depricated around the art), which is also indecipherable on mail programs/text editors that can't parse HTML (although with HTML it's marginally easier to extract the 'raw' ascii image...if you've got a decent cut/paste function). As multicoloured text art is off-topic in this group, don't expect any coloured images to be posted here. As Llizard effectively said, only use chars 32-126 in your posts (for the uninitiated, those are also the only chars you can use in your ascii art...).
